If you want to collect high resolution statistics, in the order of seconds, you should
read
them automatically via knotc or HTTP
(
https://gitlab.labs.nic.cz/labs/knot/blob/master/python/stats_http.py)
and store them into a time series database (InfluxDB,...).
Another approach is to enable automatic dumping into a YAML file
(
https://www.knot-dns.cz/docs/2.4/html/reference.html#statistics-section).
However, something like server.uptime is planned to implement.
